Hello guys! My second soup of the week is going to be just as easy as the first one. I loved this one very much, I hope you will enjoy it too.
– 1 cauliflower
– 1 onion
– 1,5 liters of vegetable stock
– 25 grams of butter
– A bunch of herbs (parsley, thyme, laurel)
– Salt & Pepper
This recipe serves 4
Let’s get to it then!
Start by cutting up the onion (try not to cry!) and chop the cauliflower into florets.
Fry the onions in the butter. Then throw in the cauliflower and add the vegetable stock and a small bunch of herbs. Boil for about 20 minutes.
Remove the herbs and blend the soup.
Finish off with some salt & pepper to your own taste and add a finishing touch with some parsley and cream. Et voilà!
I love how easy it is to make soups like this. And they’re perfect for the cold wintertime.
Next up will be a Mushroom Soup, one of my favorites. So see you guys tomorrow!
