Green Pea Soup with Mint



Hi! It’s winter, and in my opinion very cold (it’s like my fingers and nose are frozen all the time). During this period I can really enjoy a nice hot bowl of soup. I’ve only made soup once in my life… So It’s about time I changed that!

One soup recipe each day, that is what I’m going to share with you this week.
At the end of the week I’ll have tried out 5 new recipes. They’re very simple and won’t take up too much of your precious time.

Green Pea Soup with Mint

You’ll need:

– 400 grams of frozen peas
– 3 tablespoons of freshly chopped mintleaves
– 1 liter of vegetable stock
– 90 grams of goat cheese

This recipe serves 4

Let’s get this thing started!

First you’ll need to thaw the green peas of course.

Then you can mash them to a paste in a food processor or blender. When that’s done, start chopping the fresh mint and crumble the goat cheese.

Put it all together in a pot with the vegetable stock and bring it to a boil over medium heat.
Let it boil for about five minutes. And that’s how easy it is!

Pour the soup into the soup plates and add some extra goat cheese and mint leaves for that finishing touch!

I hope you enjoy this recipe, I found it to be delicious and was quite surprised of how well the mint and the goat cheese worked together with the peas. Let me know what you think!
