To make up for last week’s lack of posts, I’ll share with you a recipe I tried out this weekend. I really loved the sour taste of the lemon and the very specific taste of tarragon, though it might be more appropriate in spring or summer, but it’s too good to ignore it even in the cold winter months! It’s really easy and I will surely make it more often!
Lemon Chicken with Tarragon
– 4 Chicken breasts
– 1 tbsp. of sweet chili powder
– 50 gr of flower
– 6 tbsps. of butter
– Some minced parsley
– 1 tsp. of tarragon (dried)
– 5 tbsps. of lemon juice (freshly squeezed, I only needed 1 lemon)
– 1 Lemon
– Salt & Pepper
This recipe serves 4
Remove anything you don’t want to eat from your chicken breasts (I am a person who has to have really clean pieces of meat and chicken, or I will lose my appetite…). Season your chicken with chili powder, salt and pepper, and coat with the flower.
Bake the chicken breasts in approx. 5 minutes, and after that make sure to keep them warm while you prepare the rest of the dish.
Melt 6 tablespoons of butter, add the herbs (tarragon and parsley) and the lemon juice and bring to a boil. Rinse the lemon and slice it.
Now you’re ready! Pour the lemon butter over the chicken breasts and garnish with a lemon slice! This recipe is great with some rice.

Not the mythical flying creatures, though. Dragon in Dutch is “Draak”.
