These cookies are so delicious, you’ll want to eat them all at once! They are delicous and perfect for a quick on-the-go breakfast or a little snack.
For 24 of these cookies you’ll need:
– 115 gr of butter
– 150 gr of dark brown sugar
– 1 egg
– 1 tsp of vanilla extract
– 700 ml of apple sauce
– 135 gr of flower
– 175 gr of oats
– 1 tsp of baking soda
– 60 gr of cranberries
– 2 greased baking trays
Bring the oven to a temperature of 180° C.
Whisk the butter and sugar until foamy. This is easiest with an electric whisk. Add the egg, the vanilla extract and the apple sauce and blend until you have a smooth mixture.
Mix up the flour with the baking soda in a seperate bowl.
Add the flour and oats slowly and in small amounts to the mixture until everything is blended well together. Finally scoop through the cranberries.
Put tablespoons of dough on the baking tray and flatten a bit with the back of the spoon or your thumb (it’s less sticky that way…). Bake the cookies for 12 minutes. The sides should be golden brown. Let the cookies cool down before serving them.
