You can’t miss with this one!

My last recipe of the week is going to be a very traditional one. It certainly is one of my favorites and I don’t know many people who don’t like some good ol’ tomato soup.

Tomato Soup

You’ll need:

– 10 tomatoes
– 2 potatoes
– 2 onions
– 2 tablespoons of ketchup
– 3 tablespoons of cream
– 1,5 liters vegetable stock
– 100 gr tomato purée

This recipe serves 4

Let’s make this soup happen!

First you’ll have to chop up the tomatoes, potatoes and onions. Braise the potatoes and onions and when they’re almost ready add the tomatoes.

Then add the vegetable stock and bring to a boil. Let it cook for approximately 20 minutes.

Blend the soep and sift (if you haven’t peeled the tomatoes). Add 2 tablespoons of ketchup and some tomato purée. You can finish the soup off with salt and pepper to your taste and some cream if you like. Ready to serve!

I hope you’ll enjoy this soup as much as I did. It really takes me back to being a kid. I’ve always loved me some tomato soup!

Great for those cold days!

Great for those cold days!

Aloha! Today’s soup is perfect for warming yourself during the cold winter. I actually used some feta (25 grams per serving) but this combo didn’t work that well for me. So I won’t be including it in the recipe. But if you want to, feel free to try it! You just have to cut the feta into small pieces and pour the soup over it when you’re ready to serve.

Beetroot Soup

You’ll need:

– 400 gr beetroot
– 800 ml vegetable stock
– 200 gr tomatoes (from a can)
– 1/2 lemon
– Salt & Pepper
– Oregano

This recipe serves 4

Let’s get to it then!

Firstly peel the beetroot and chop up. Squeeze the lemon (remember you only need half a lemon).

Bring the vegetable stock to a boil and add the beetroot. Let cook on medium heat for 15 minutes.
Then add the tomatoes and let the soup cook for another 5 minutes.
Blend the soup.

After blending, reheat the soup and pour in the lemon juice. Then add salt & pepper to your own taste.
Your soup is now ready to be served! Top with some oregano leaves for presentation.
